Leftover Beef Roast - A Delicious Problem to Have!

Directions
Ingredients:
1/4 cup olive oil
1 cup mushroom caps
1 shallot, diced
1/4 cup diced sweet peppers (red, bell, banana)
1 medium tomato
1 1/2 cup cubed roast beef
1 Tablespoon chopped parsley
Salt and Pepper to taste
Instructions: Sauté the mushroom caps in the olive oil to throw off any liquid. Add shallot, peppers, tomato, beef and parsley. Salt and pepper to taste and serve warm.
